3 cups fresh corn, cut and scrapped off cob 2 eggs large ¼ cup milk 1 teaspoon salt 3 ½ tablespoons sugar 1 teaspoon baking powder 2 tablespoons butter 3 tablespoons flour
Blend all ingredients together in blender for 30-45 seconds until mixed but not totally liquidified.
Adjust consistancy by adding more flour or milk as needed (pancake consistancy or a little looser).
Fry in a non-stick pan until edges and center are dry. Flip and continue cooking until firm.
Serve with queso blanco (white crumbling cheese) melted on top.
