1 pound Jimmy Dean breakfast sausage 9 inch pre-made frozen pie shell 1 1/2 cups grated Swiss cheese 1/4 cup red Bell pepper, chopped 2 tablespoons chopped onion 4 medium eggs lightly beaten 1 cup light cream or half and half Salt and Pepper to taste
*Note: Egg Beaters may be substituted for regular eggs
Cook Sausage until done, crumble and drain. Prepare 9" pie shell according to directions. Lightly beat eggs in bowl. Combine remaining ingredients and add to egg mixture. Pour into pie shell. Bake at 375 degrees for 40 to 45 minutes or until done in the center. Cool on wire rack for 10 minutes.
Yields 6-8 servings.
Country Breakfast Pie can be made ahead of time to the point of baking and can be frozen. Great for brunch!
