3 ripe bananas, mashed 2 eggs 1/2 cup vegetable oil 1/4 cup buttermilk or heavy cream 1 tsp vanilla 2 tsp lemon juice 2 tblsp Amaretto Liquor (optional) 1 3/4 cup all-purpose flour 1 tsp baking powder 1/2 teaspoon salt 1 cup sugar 1/2 cup chopped walnuts or pecans Preheat oven to 350F.
Prepare 9x5-inch loaf pan or muffin tins for 12 by greasing and flouring.
Combine all wet ingredients in a large bowl and mix well.
Combine all dry ingredients except nuts and sift slowly stirring by hand to incorporate.
Transfer batter to pans and bake about 30-45 minutes (top should be golden brown and slightly split).
Makes 1 loaf or 12 muffins.
