3 tablespoons brown sugar, packed 2 teaspoons yellow mustard ¼ cup apple cider vinegar ½ cup canola oil ½ teaspoon salt ½ teaspoon black pepper
Combine brown sugar, mustard, vinegar, salt and pepper in a blender or food processor. Process until sugar is dissolved.
With blender or processor running, very slowly add oil in a small steady stream until fully incorporated. Should take about 1 minute.
Continue to process for 1 additional minute to fully incorporate.
Refrigerate until chilled or serve at room temperature.
Serve over fresh baby spinach leaves with toasted pecans and sliced mushrooms.
