1-1.25 pounds ground turkey or beef 4 tablespoons olive oil 1 large onion, chopped 2 cloves garlic , minced 1 tablespoon chili powder, mild 1 teaspoon cumin 1 teaspoon Adobo seasoning 1 packages chili seasoning, mild 1 can chili beans, optional ½ bottle picante salsa, mild 1 can enchilada sauce, red 1 cup vegetable or tomatoe juice
Saute onions in olive oil until tender, add garlic and cook for 2-3 minutes. Next add ground meat and continue to cook until meat is browned.
Stir in all ground spices and seasonings, mixing well.
Add salsa, beans and enchilada sauce to pot.
Simmer on very low heat for 2-3 hours until all flavors blend.
Add as much of the vegetable or tomatoe juice as needed to thin out as desired.
Serve plain or with rice and cornbread.
