1 medium red pepper, diced small 1 medium green pepper, diced small 1 medium orange/yellow pepper, diced small ¼-½ small sweet yellow or red onion, diced small 6-8 medium de-seeded roma/plum tomatoes, diced small 4 tablespoons apple cider vinegar 1 large lime, juiced ¼ cup cilantro, finely chopped 1 teaspoon salt 1 teaspoon black pepper 1 teaspoon sugar 1 teaspoon garlic powder 4 tablespoons extra virgin olive oil 1 large avacado, ripe
Combine all ingredients except avocado mixing thoroughly and let marinate at least 12-24 hours stirring once.
30 minutes before serving, dice avocado into medium 1/4 inch chunks and carefully fold into salsa immediately so avocado does not oxidize.
Do not over mix or avocado will dissolve into salsa.
Serve as desired.
