2 tblsp. extra virgin olive oil 4oz smoked ham chopped into medium cubes ¼ cup onion chopped fine ¼ cup carrots chopped fine ¼ cup celery chopped fine 2 cloves garlic chopped fine 1 bay leaf 1 sprig each of marjoram, thyme and rosemary 4 cups chicken stock (low sodium) 1 cup split peas (sorted and rinsed) ¼ tsp. salt ¼ tsp. pepper
Sauté the ham and the next 4 ingredients in the olive oil for 3 minutes over medium heat. Next add the bay leaf, marjoram, thyme and rosemary and continue cooking for 1 additional minute.
Pour sautéed ingredients into slow cooker. Next pour in the chicken stock, split peas, salt and pepper.
Cook on low for 3-4 hours. Adjust salt and pepper to taste when done.
REMOVE BAY LEAF BEFORE SERVING.
